AnySharp Evo catches your metal filings in a covered tray. The cover can be removed to empty the filing tray periodically. You should still wipe your knife before use, as some filings may still adhere to the blade.

AnySharp Evo is pre-set at 20 degrees and allows anyone to achieve professional results without any training. Once you attach AnySharp to a work surface, you can safely and easily sharpen knives with just one hand by gently drawing the blade through the tungsten carbide sharpening edges 3 or 4 times. Remember to use very little pressure and to wipe the knife before use.
